Fredrik Önrup
Fredrik has an MBA and has studied Hospitality Management and Revenue Management in the United States, including at the Cornell University. Since the mid-90s he has successfully applied Menu Engineering and is now a frequent lecturer and consultant. He is also the sommelier and importing wines from Italy.

Revenue Management can be applied to all revenue generating departments like Meetings, Restaurant, Minibar, Spa Facilities, Sports Activities, Parking, etc. To apply Revenue Management means that more aspects, such as Lead Time, Cost of Sale, Key Figures, etc. have to be taken into account. Complexity is added but with that also possibilities to increase result. With the application of Revenue Management now "Total Revenue Management" is being developed in order to optimize all revenue in relation to costs to achieve maximum profits. The aim is to provide participants with practical knowledge on how to optimize revenue in all departments. The training is combined with exercises and examples aimed at different hotels and conference centers. A six months access to Pingvinens Menu Engineering program is included in the course!
